Asian-style salad
Ingredients:
- 6 king oyster mushrooms
- quarter of a red cabbage
- 1 mango
- 4 carrots
- olive oil, salt and pepper
For the salad dressing:
- 150 ml water
- 1 tablespoon of sesame oil
- soy sauce
- rice vinegar
- salt, sugar, chilli flakes
- coriander
Preparation:
Wash the mushrooms, cut in half horizontally, then slice lengthwise. Season with salt and pepper and soften in a little oil, then fry until golden. Remove from the pan and leave to cool.
In the meantime, cut the vegetables and fruit into strips.
Combine the ingredients for the salad dressing. Toss the cooled mushrooms and remaining ingredients in the dressing, then refrigerate for 20 minutes before serving, to allow the flavours to intensify.
