Fried mushroom with ginger and shrimp on rice noodle bed
- 500 g button mushrooms, cut into thick slices
- 250 g rice noodles
- 500 g cleaned shrimps
- 2 teaspoons fresh grated ginger
- 1 bunch cilantro
- 1 bunch spring onions
- 5-8 baby corns
- soy sauce, salt and pepper
First cook the rice noodles. It only takes a few minutes and is very easy to work with because it can’t be overcooked. After draining, sprinkle it with a little soy sauce.
In a heated non-stick pan, fry the prawns and put them aside. Saute the mushroom slices and season them with salt and pepper. Add the small pieces of ginger, green onions, carrots, baby corn and cook for a short time. Add the finished prawns and rice noodles and mix them together.
