Green bean and mushroom salad


  • 1000 g button mushrooms
  • 400 g green beans
  • 3-4 cloves of garlic
  • 150 g goat cheese
  • coriander
  • oil, salt and pepper

For dressing:

  • olive oil
  • balsamic vinegar
  • garlic
  • pepper

Top and tail the green beans, then steam lightly, ensuring they remain crisp. Slice the mushrooms, season with salt and pepper and sauté. Sprinkle with coriander and gently stir into the green beans.

Combine the ingredients for the dressing and drizzle over the beans and mushrooms.

Serve topped with goat cheese. This salad is best served warm, although it can also be prepared in advance and eaten cold.
