Green beans with fried mushrooms
Ingredients:
- 500 g baby chestnut mushrooms
- 1 teaspoon of green pesto
- 1 kg green beans
- flour
- onion, garlic
- parsley
- oil, salt and pepper
Preparation:
Wash and slice the green beans, then cook in a small amount of water. Make an onion and garlic roux with the flour and use to thicken the beans. Add fresh parsley to taste.
Wash and halve the mushrooms then fry in a little oil. Season with salt and pepper and stir in the green pesto. Fry until golden, then serve as a topping for the creamed green beans. A healthy and delicious vegan summer lunch.
