Mixed salad with raw mushrooms
- 300 g button mushrooms
- 150 g fresh lettuce (arugula, baby beetroot, baby spinach, lamb’s lettuce)
- 200 g goat cheese
- 3-4 tomatoes
- 2-3 tablespoons toasted pine nuts
- 2-3 tablespoons dried cranberries
- sweet balsamic vinegar cream
- pumpkin seed oil, salt
Place the fresh lettuce on a flat plate and put the clean, thin raw slices of mushrooms, the diced tomatoes, the goat cheese, the pine nuts and the dried cranberries on it.
Just before consuming, sprinkle with pumpkin seed oil and balsamic vinegar.
