Mushroom and strawberry salad

Ingredients:

  • 250 g white button mushrooms
  • 1 fennel bulb
  • 2 celery stalks
  • 1 small tin of quinoa (140 g)
  • 4 or 5 strawberries
  • juice of 1 lemon
  • 1 tablespoon of honey
  • a handful of microgreens
  • salt, oil

Preparation:
Place the sliced fennel and mushrooms in a pan with a little oil. Season with salt, drizzle with honey and lemon juice and fry until crisp.

Add the chopped celery stalks and cook for a further 2 to 3 minutes.

Next add the chopped strawberries, quinoa, and microgreens. Sprinkle with lemon juice and mix gently before serving.
