- 6-7 medium button mushroom
- 250 g flour
- 1 teaspoon baking powder
- 100 ml milk
- 4 eggs
- 100 ml olive oil
- 2 tablespoons fresh, finely chopped tarragon
- 40 g Parmesan
- salt and pepper
Finely dice the mushrooms and fry without oil.
Mix the flour with salt, pepper and baking powder. In another bowl mix the milk, eggs and olive oil, then add to the flour mixture.
Mix well together before adding the tarragon, Parmesan and mushrooms.
Fill the mixture into muffin trays and bake in a pre-heated oven (200°C) for around 25 minutes.
