Oyster mushroom stew with couscous


  • 500 g oyster mushrooms
  • 1 onion
  • 2-3 tablespoons red pepper powder
  • salt and pepper

Sauté finely chopped onions in oil and then add the oyster mushrooms cut into strips. Add salt and pepper, sprinkle with red pepper. Add 1.5 litres of water.

Oyster mushrooms require longer cooking than button mushroom. Cook for about 20 minutes until soft while stirring constantly.

Couscous, which does not require any cooking, makes a very healthy side dish for this recipe. Preparing couscous really only takes a few minutes: add hot water to it and cover so it can absorb the water. Its advantage is that it has a rather neutral taste, so it can be seasoned any way you wish.
