Pasta salad with raw mushrooms
- 500 g baby white button mushrooms
- 200 g orzo pasta
- half a cucumber
- 1 bell pepper
- 100–120 g feta cheese
- 2 handfuls of olives
- juice of 2–3 lemons
- olive oil, salt
Cook the pasta and allow to cool.
Quarter the mushrooms and dice the cucumber and pepper. Combine with the cooked pasta, drizzle with lemon juice and olive oil, then sprinkle with coriander.
The salad can be prepared in advance. Delicious on its own, it also makes an excellent accompaniment to meat.
