Vegan mushroom kebabs


  • 400 g button mushrooms
  • 2 red onions
  • 2 bell peppers
  • oil, Greek seasoning mix
  • potatoes
  • sweet corns
  • wooden skewers

Soak the skewers in water while preparing the ingredients. Quarter the mushrooms and cut the peppers and onions into large pieces.

Boil the potatoes whole, allow to cool, then cut in half.

Break the sweetcorn cobs in half, cook, then allow to cool.

Thread the mushrooms, peppers, and onions alternately onto the skewers. Drizzle with a mixture of olive oil and seasoning, then grill the kebabs, potato halves and corn cobs.

Serve with cheese sauce or hollandaise sauce.
