Vegetarian chilli tacos


  • 500 g oyster mushrooms
  • 1 red onion
  • 250 g canned red beans
  • 250 g canned sweet corn
  • 1 packet Mexican chilli bean mix powder
  • oil, salt and pepper

First sauté onions then add chopped oyster mushrooms. After adding salt and pepper season with Mexican chilli spice mix. Simmer for a while longer, add water if necessary, but the mushrooms will release enough water, so take care not to add too much. Cook on low heat for about 20 minutes until soft. Mix several times to avoid burning. Add the canned beans and corn at the end.

It can be served as a one-course dish, but it is also an excellent filling for tortilla or taco wraps. It is a practical quick supper on weekdays
