Mushroom and bulgur salad

Ingredients:

  • 250 g white button mushrooms with closed caps
  • 200 g cooked bulgur
  • 1 red onion
  • 1 bell pepper
  • juice of 2 lemons
  • fresh coriander and mint
  • olive oil, salt

Preparation:
Finely dice the pepper and red onion and thinly slice the raw mushrooms, then stir into the cooked bulgur.

Add the finely chopped herbs, season with salt and sprinkle with olive oil and lemon juice.

Toss gently and serve at once with fresh focaccia or toast.
