Mushroom Nicoise salad
Ingredients:
- 250-300 g white small-headed button mushrooms
- 1 medium-sized Romaine lettuce
- 4-5 hard-boiled eggs
- 200 g cherry tomatoes
- 1 jar of tuna chunks
- 1 small onion
- 2 lemons
- 1 small cucumber
- olive oil, salt
Preparation:
Gently combine the salad ingredients, then top with the very finely sliced mushrooms. Season with salt and sprinkle with olive oil. A quick and tasty dinner for hot summer evenings.
