Fresh salad with mixed mushrooms
- 250 g button mushroom and oyster mushroom
- 200 g baby spinach
- 6-7 quail eggs
- 1 bunch radish
- some cucumber slices
- spring onion
- balsamic vinegar
- olive oil, salt and pepper
In heated oil toast the garlic, then add the sliced mushroom. Season them with salt and pepper and ready-fry for a few minutes. Mix in a bowl the baby spinach with the cucumber slices, the chopped spring onion and the diced radish, then add the fried king oyster mushrooms and place carefully the half cut quail eggs at the end.
Prepare the dressing: mix the oil, the mustard, the pepper and the balsamic vinegar and sprinkle the spinach salad.
Instead of king oyster mushroom you can use oyster mushrooms or button mushrooms but even their mixtures because they have the same amount of cooking time.
